Packaged food products are placed into an HPP cylinder, loaded into a high-pressure chamber and subjected to a high level of isostatic pressure (300-600 MPa or 43,500-87,000 psi) transmitted by water. Pressures above 400 MPa or 58,000 psi at cold (+4°C to 10°C) or ambient temperature inactivate the vegetative flora and pathogens like Listeria, E. coli, Salmonella, lactic acid bacteria, yeast and mold that are present in food.
